Responsive Template Question

I have a question about some of the responsive templates. They go ALLLL the way to the edge of my laptop screen. That's great for websites that have a lot of content to fill all of that up, but what about websites that dont have a lot of content and that extra wide look doesn't really look good? I guess you can switch to non-responsive and take the width down to 960, but then I lose my mobile view because there is no more "mobile" template.
So my question is, is there a way for me to set my own max-width(for sites with not a lot of content), but keep the templates responsive for any width smaller than the max? That way I can keep the mobile and tablet views. I noticed that on my 19 inch monitor that they do eventually get to a max size. I need to make that max size smaller. - Lamonte G
