Since I am restoring back to the same server using the same database, do I really need to use such a complex and time consuming Akeeba Backup method which is more for migration rather than just simple subdirectory to root shifting?
Maybe I try both to check out how Akeeba Backup really work.
Using Akeeba Backup
1. Install Akeeba Backup to Joomla as an extension
2. Run Akeeba backup from Joomla Components
3. Download backup archive with FTP
4. Upload Akeeba kickstart to root directory with FTP
5. Upload backup archive with FTP to new directory
6. Run Akeeba kickstart
www.mysite.com/kickstart.php
to extract backup archive
7. Run restoration script
www.mysite.com/installation/index.php
8. Amend configuration settings
9. May still need to edit configuration.php by removing Joomla subdirectories so that all links point to the root (tmp, log, root etc)
1. Download whole Joomla folder with FTP
2. Edit configuration.php by removing Joomla subdirectories so that all links point to the root (tmp, log, root etc)
3. Upload Joomal folder to root with FTP
4. Empty cache folder

Hi JEM,
I tried the easier and faster method and it's working fine. So I didn't really want to retry the move with Akeeba again. But I will keep Akeeba for backup, and maybe migration to another server when necessary in the future.
