I would like to use a web 2.0 looking table within Joomla, much like the tables here:

Create your tables in your favorite editor and then paste them into your Articles with the WYSIWYG editor off.
AFAIK, there's no simple way, you have to hand code pages like the pages you provided links to. - Thanks,

- When you say editor, are you referring to word processors such as microsoft word?

No you need to use an HTML editor such as Dreamweaver.
That's on the high end of the scale, just and example, because that's what most of use use here.
But with any HTML editor, you should be able to create table and then paste the code into your Articles.
As a matter of fact, I have Dreamweaver, but often use MS FrontPage for simple stuff as Dreamweaver is a bit of overkill for what I need to do.
If you Google 'HTML editor', you should be able to find a free editor to suit your needs, or at least something reasonably priced, such as this:
