Transfering site to new hosting - What files should need to be taken over?

I will be transferring a Joomla site (Elemental) over to a new hosting company. Does anyone have a good work flow for making sure things are kept in line and the site is duplicated correctly! I want to make sure that certain files or codes are changed that may be linked to Database by previous hosting company. Any help would be greatly appreciated.

Best way would be to create yourself a Joomla installer (what rt calls the rocketlauncher).
How do you do it? Using the www.joomlapack.net/ component. - Say no to Internet Explorer 6.
