Hi,
in the overrides' Assignments screen, there are two boxes labeled Posts and Pages and in them you'll find a list of all your single posts and pages. Two assign the override to a single post or page, tick the checkbox besides it's name and click the "Add to Assigned" button and then Save the changes.
Please see the attached screenshot, I have assigned the override to Sample Post and Sample pages. When a user visits these posts or pages, the override will be applied.

To apply the override on all posts, tick the checkbox beside the Posts title (see the screenshot above). This way when a user is visiting a single post (no matter what post) the override applies.

Yeah, that's one of my favorite features of Gantry Framework, the overrides can be assigned to pretty much any context, which gives total control over every section of the website.
