Now when I try to edit any particles I get this error message.

I can't think of anything else I did that would have changed anything.
I cleared caches and browser history and tried in an incognito window before asking.
Website is here and looks fine from the front end. Only noticed the problem when I saw a very silly typo.
Did you clear out all your Joomla System Caches after the update?
What version of PHP are you running?

Cleared the joomla cache and tried again. Same error.
The only other thing I did today was install RSFormPro!
I just tried disabling it and clearing the cache. Still same error. I didn't make that much progress on my form so I could uninstall it to see if that was the problem.
Hrm... You could certainly try PHP 7... everything should work good/better on 7... 5.6 should be much faster as well
This only happened after upgrading Gantry to 5.3.1? Was 5.3.0 the previous version or was it 5.2.x?
I reckon you could try reinstalling Gantry as well

I was poking around on the gantry website trying to find the previous version. I don't see the previous ones. I'm not sure of the previous version number.
Do you know if they have the previous gantry versions posted somewhere?
I updated this one quickly because the last one had given me an error a non-fatal that I posted about in the Sienna theme section and it was one of the bugfixes. I was trying to fix that error.
I'd say it's worth backing up and going for a PHP 5.6 or 7 upgrade honestly...
It's a Joomla core file that's bugging out... it doesn't look like there are any other reports of it and the error is not present in any of my installs.
Do you have any Joomla Admin 3rd party extensions installed? Can you try disabling all non-RocketTheme extensions that you may have running... particularly anything that effects the Joomla Admin itself...?
