There's no "random" order on that particle only the options shown in the dropdown.

Well You'd need to create an override for the contentarray particle ("joomla article") and alter the twig code to do that. Quite what you would have to change I don't know but you could always ask in github Gantry 5 chat - that's where other developers hang out for Gantry 5

. You will need a good knowledge of PHP, HTML, TWIG, YAML, and Joomla interface APIs to achieve this.
