Newby needs template recommendation

Hello community,
I am on the verge of creating my first website. I have read and studied all possibilities and finally landet at Joomla. And in search for good working templates I landed here.
Now my problem is that due to the lack of my experience I am not totally clear on how far I can customize a template to my needs. Especially when it comes to the menues.
Since it will be a new site I want to programm it up to date. So I installed Joomla 3.0 and have the intend to make the site compatible to all mobile devices.
On the other hand I like clear simple designs. The new templates that are 3.0 compatible and responsive seem a liittle bit too modern for my needs.
I actually like the Zephyr Template for example. Especially after seeing this site: www.rollingh.com/
Now my question is: Which Template from 2012 to 13 would you recomend to make a site in similar outline but with up to date functionality?

I would reconsider the Joomla 3.0 choice if I were you. That is really just for testing and development work not for live/production sites. See the two articles below about this.

Ok I read the Articles. Thank you for making me aware. Does make sense in this case to get 2.5 for now and then switcht to 3.5 in autum.
Still, the mentioned responsive template issues resides. The choice is bound to 2012 and 13 templates. But I guess I have found what I need. I will probably go with Metropolis or Kirigami.
