I have a new project I'm working on and any advice in regards to which Joomla plugins/extensions that could work towards making this happen is appreciated... The main objective is to have a user manageable profile where the user create a login/password and can customize their profile (after paying for the service). They need to be able to upload video, audio (mp3/mp4), pdf documents, powerpoint files, and photos (png or jpg) so they can email a "link" to a client. When the client opens the link, it will take them to the user's profile which will automatically play the audio message/video clip, etc. that they uploaded/customized. Almost like an interactive email. I also need to track when the link is clicked/opened by the client in some type of analytics on the backend (also visible by user in managing their profile). Any thoughts??

That sounds like bespoke development to me (you could do bits with extensions and plugins but is will most likely look a little frankenstein like - so better to do bespoke solution).
I would recommend that you consider looking at Fabrik http://fabrikar.com/ . It is quite a complex product and you will need a good knowledge of mysql and some php coding knowledge - I have used it quite a bit and it is an excellent solution to building proper applications within joomla. Fabrik is capable of all the things you seek.
