Does the live/dev mode on the gantry temlpate only switch off the listener for the SCSS changes and thus not update them when live or does it do other things like compress files?
I've always been told that we should not double compress things like using RokBooster, turning on Admin Tools copmressiong and using multiple Gzips like Joomla/Admintools.
Do you have any information on the best setup for a Gantry based website in terms of speed/performance? A guide would be great!

production/development mode does other things too but NOT compression.
Basic rule is - if in production (all development finished) then use production mode - otherwise use development.
Rokbooster should really only be used in production too (after you have tested and tuned it).
So yes, you should use rokbooster and production more, and joomla "conservative" cache and gzip compression.
You should not use rokbooster in conjunction with any other compressor (such as JCH_optimize).
