How to implement the choice template options - Versatility II

I have chosen the versatility II template as it has template colour options, however now that I've installed this template I can't see this option, so I've either turned it off without realising or I have to implement it. Either way could someone please tell me how to include this on my site.
Also I would like an option which when clicked will allow users to see a completely new template. So for example I have four different templates and I want people to be able to choose a template and see how it will look if it were live, like how the colour option changes. Can this be done?
