Simple, clean and easy. Menu on the left, text in the middle, image on the right. All remaining static size and flowing nicely.
This site was made in Dreamweaver I believe, which would be easy enough to replicate, but trying to recreate it with Joomla has been difficult. I was hoping to use one of the themes here and work from there but I've been having no luck. Anyone have any recommendations about which RT would be easiest to convert to something like this, if there is one, or anyone know of a theme somewhere that reminds them of this that I could start with and tweek?
I think Simplix could work. It has similar options for module positioning and a style that is close enough to the existing design layout to get you started.
You would have to make some changes to the css to adjust the colors and font styes /colors. But... it is close enough for a start.
Take a look at the demo and pay attention to the preset styles and module positions available.

You can easily collapse the module by unpublishing it which you don't want in module manager in admin back end.
Definitely making progress. At the moment, I can't get rid of the space between the image (article) and the module in the middle. When I make the image height 375 which the height everything else is supposed to be set at, the module in the middle grows past the others. When I set it below (then the image is smaller so it's not even across the bottom) the module in the middle goes back to 375.
For some reason, the article also seems to start 1px lower then the others. I'm trying to set it up where the image is the same height as the modules and the menu, and is also side by side connected without a space.
Then I have to figure out how to change the white footer space to match the background.
Great recommendation though, a bit more tinkering and I'm sure I'll figure it out. Then it's time for font color/style etc, but that's the easy part!
Well, I've gotten everything almost exactly how I want it, except two problems.
1) The image still isn't the same size as the other boxes, if I put its height to the same size, the orange content module expands past the rest. I'm not sure if there's a padding/margin option or something along that line associated with articles (the image is the article), that may be pushing things when it's extended..?
2) In IE and Chrome, the page doesn't extend fully like in Firefox. It's 3/4 of the page and the rest is white.
Well, I fixed the problem with them aligning at the top, but the middle module still extends a bit whenever I set the image to 500px height. When I reduce it, the module goes to it's correct 500px height....
