I've got my first Joomla site running, using the Dark Matter template.
Chayah Gospel Church - http://www.chayahgospel.com
It uses the following components:

- JoomlaXPlorer
The Rocket Theme template was excellent - thanks guys! I was amazed at how easily I was able to get it all going. There's lots more content to go up, but we've got a much better starting point than I had expected. You guys rock!

Visual communication has been very important in the centuries for ANY religion, at least as much as content.

I have to support MediaWorks here, the colors are very important.
The lord does not care about colors, but the users of your site do. Light text on black hurts the eyes, and is even more important in this case because your site should appeal to people of all ages.
Very dark backgrounds should be reserved for sites where the focus is on images, such as a a gallery website. I don't recommend dark backgrounds where a significant part of the website is text.
Other than the colors, it's great Michael.. you should see MY first joomla site LOL. - Say no to Internet Explorer 6.
