- Have you tried just updating manually via downloading the file and updating through the Joomla extensions installer?

- im getting those crazy errors again like in the first picture.. so if you wanna log in and check em again all the user info is the same..

- Definitely seems to be something related to your server environment. I'm not sure what else to suggest at this time. Can you test/install it somewhere else with same config?
