Well currently I'm mirroring snapshots of my site's filebase for about 10 edits back, manually, but with a little script, easy to do. Whenever I edit something, I create a snapshot.
For the database I use mysqldumper ( http://www.mysqldumper.de/en/ ). Which also backs up our phpbb forums and any other stuff found in the database. This runs every night as a cronjob, ftps the backed up database to 2 different ftp servers for redundancy and e-mails me a report.
This scheme was developed after having been victim to hardware failure at our hosting company's database servers, hacking attempts and other stuff that comes up when your site is frequented by individuals of dubious intent
(read=>kiddies playing wow)
Also, setting up a test site has never been easier for me
