I have the RokSprocket and RokGallery extensions, but they are zip archives, what do I actually load in the Extensions Installer in my admin panel?

I think most of what you need is already installed... if you find you are missing something then you can install it. You will find the RokGallery under Components in the Navigation dropdown. And RokSprocket under Extensions >> Module Extensions.
