I'm having difficulty installing the RocketLauncher (I'm sure it's a file permission thing on the host...it's hanging on the language page) but the host offers a Joomla control panel install of J 2.5.6.
At the end of the day I want to install the Fresco demo -- but am wondering if it would be a simple matter to use the host's control panel install, install Gantry and the template and then lastly the sample data via phpmyadmin.
Any advice appreciated.

You need to follow the install directions. If you want to use RocketLauncher as a new install and choose to load the demo content, you must install the RocketLauncher. You can find detailed information here:

The direction you suggest, will not work.
If you have access to your cpanel, you can upload the RocketLauncher zip there. And unzip the files from the cpanel as well.
After you have unzipped your files to your root folder, navigate to www.yoursite.com/administrator
This link will take you to the link to complete your Joomla RocketLauncer setup.
IMPORTANT: Before you install, be sure to create your database and assign permissions. You will need all of this information to complete setup, so take notes.
