File permissions problems when FTP local site to server

Hi All
Newbie, have 3 sites on the go. My process is this:
1. install RocketLauncher locally on Windows & XMAPP
2. add all extensions, do all design locally
3. use Filezilla to FTP local site to web server
This works pretty well, except I always seem to get file permission errors in certain areas, especially on extensions. I didn't get these when I was running it locally. So now I am in this process where I have to go into Filezilla and reset permissions, always ad hoc, trying to find (really, guess) which files may be the problem and changing (often broadly, meaning entire folders) to 755, or the "make-me-very-nervous" 777.
Are there some concepts I can learn on what folders / files to set permissions for and what permission level? Would using the joomlaXplorer extension to move my files to the server be a better way than using FTP with Filezilla, since I did not have permission problems locally? Or am I in an ad-hoc-live-by-experience mode on this?
