I've suddenly started to get lots of unwanted spam sent via the contacts form on one of my sites - does anyone know of a way to stop this? I noticed from another thread that you could add CAPTCHA to the registration form - can I do anything similar here?

The people at the "joomla guru" website just experienced a similar problem, and rewrote the original joomla com_contact code. It is available from their website. It incorporates a simple but effective image security code as well. Saves having to program in a module or another component. I just installed it via ftp, overwriting the original files in the components/com_contact folder. Seems to work fine.
It is not overly flashy... the letters/numbers combination you need to enter are easy to read so making mistakes in entering the security code from the image (because of flashy text that at times is hard to read properly) is redundant. You can see it in operation at this website:
