template overides in 2.5

I am just getting into overrides (to have unique layouts for specific menu items). I create a copy of the template (master) and make changes to the copy and the save the changes. Problem is that this seems to overide every item assigned or not - becoming the new default style.
I am in 2.5 using ximenia (but have had this same issue with other templates)
Any ideas about what I may be doing wrong?

No... not the same thing
within the joomla template / gantry control - I am copying the style to create a different layout.
So I have a master and an overide. The master template should determine the style for all but menu item assigned in the override.
There is a video showing how this would work on gantry site with right side and left side columns. - Sean Carew

I did..and it works...but is applied to everything...not just the assignment...
so the override is overiding everything, assigned or not...this is the problem
Do I not understand the overide/master relationship?

I am able to overide specific menu assignments.
What was happening was english was being set in the overide...which I can only undo from the template list (shows a flag instead of a star on the default column)
when I removed it...it worked as expected.
