Security Issues with 7.4 - but 8.0 Breaks my website

I just bought a brand-new theme here, "Studius" Today 11-17/2023 - installed the RocketLauncher, all was fine until I went into the admin aread to encounter the following print screen message.
If I put the PHP up to 8.0 - the site disappers and gives me an Orange page. So I return the PHP to 7.4 - site returns, but I have a security message issue.
How do I correct this in order to have a secure website using the theme I've purchased. This is the second theme, I thought the other one was too old, so I bought the currect one. I'm having the same exact issue.
Please help me with this?

- Ensure that the Gantry 5 Component and Joomla itself has been updated to the latest version before switching to PHP 8+ and you should have no issues provided you haven't installed other components since installing the RocketLauncher.
