Joomla File & Folder Permissions Using IIS

I seem to be having file and folder permissions. I recently set up an IIS server on W2K3 with IIS6.
Can someone tell me exactly what Users need what permissions on what folders? Of course without opening the whole website up for destruction.
I tried to migrate an active site from GoDaddy to the New IIS Server and things seem okay until you have to adjust something. For example I was getting a permissions error on a template's params.ini, but solved that by adding the Internet Guest User account Read and Write permissions as per the post in another forum on here. I applied these settings on the whole site and told it to change it on subfolders as well. When I go to edit a gallery in com_morefeosho and I get denied permissions and can't seem to understand why.
Lastly, when I transfered the site the videos (swfs) that are used in the right hand module using MOSEASYMEDIA no longer play. They look like they are there but they won't play. I checked and double checked URLS etc but still no luck.
Any help is appreciated as this permissions thing is very frustrating spending three whole days searching for solutions and coming close only to find out not close enough.

Hello,
If you want to run Joomla sites, I highly recommend you to use linux server which supports PHP fully.
I am not familiar with IIS server....
The only way I can suggest you is to switch to linux server with apache
