I'd like to change the standard font sizer, to an AAA style rather than -/+ as it is by default.
Can anyone offer some pointers as to what to do?

Indeed. My mind was stuck on modifying what's there within Gantry, but of course you're absolutely right, it might be simpler to go for another solution.
