Gantry Responsive Template Width

Hi All,
Apologies if this has been answered elsewhere, i've tried searching the forums but any related topics I find seem to 'run away' a little and it's difficult to dissect what the solution is.
Does anybody know how to reduce the width of the Gantry template width when set to responsive? Or should I say limit the maximum width when in responsive mode? I find that although ideal on a mobile device, at some desktop resolutions the template is just too big, I understand that this is the nature of how the responsive setting works in terms of adapting to a browser size, but if there's a way that it could be set so it's 'no bigger than' that would be amazing.
Any help you could give me on this would be most appreciated.
