I understand I need to override the Blog particle to remove the default hyperlink from the title. I did find the documentation for that but can not find the source TWIG and YAWL files in my Joomla install. I looked for "blog" in both the "templates > rt_flux > particles" and the "media > gantry5 > engines > nucleus > particles directories."
Does the blog particle use a different title? Or are the files located somewhere else?

There's no such thing as a blog particle. The "Blog" in fluent is created by Joomla because the menu item is of type "category blog". If you want to remove the link on the title of the article then you just change the blog settings in the menu item.
