As the title says, any ideas how to go about creating a 3 | 8 | 1 layout in the header position? The sliders don't give that choice and I'm not sure where/how to go to override it to show 3 | 8 | 1.
Template manager does not offer that choice - there are no single column positions at all. So, you would have to use custom CSS to achieve that. But... I would advise against it as a single column can look very small as the viewport is reduced in size (e.g. tablets).

OK, but it's a 12 column layout so you're actually saying it's really only a 6 column layout which doesn't make sense.
Let's assume I actually do want to have a single column position (as we do to add a language switcher with small icons in the header positions), how do we go about achieving this without css overrides?
Where are the column settings actually stored within wordpress/gantry? Somewhere in the database or in a separate file?
Gantry is 12 column layout - To reduce the complexity of template manager (and because in practical terms a single column is two small to show anything useful) the smallest number of columns that can be used is 2 for a position. - but you can have other sizes 2,3,4,5,6,7,8,9,10,12.
