Hydrogen is a very basic template and has limited typography and variations. The variations are shown in a dropdown list in particle settings (e.g. box1 box2 etc etc). Our other templates for Gantry 5 (Callisto and Ethereal) have much more extensive typography and variations and these are shown on the "block variations" and "typography" pages of their respective demos.
