Block variations are set on the "block" tab of the particle or section settings on the layout. If you do add a custom one then your will need to write the CSS for it in a custom CSS file.

Thanks for the info but I already know how to assign variations, I was asking where to go and add the new custom variations, maybe I should have said "add" instead of "set". I found the answer by searching through files - new variations can be added in the theme.yaml file. Thanks for taking the time to answer anyway.
You don't want to be changing any of our original template files as they will be overwritten again by template updates.
There is no need to add extra variations. All you need to do is to add a "class" instead on the block tab and then add seom custom CSS to make it do something. All a variation does is give your a dropdown list of the classes (with a more meaningfull name) for the classes we already created for the template CSS.
So my original advice stands, add your own class and write your own custom CSS. Do not change theme.yaml

MrT I appreciate you taking the time to respond however there is one BIG advantage to setting variations instead of adding random classes... And its the same reason there are such things as variations in the first place.... "I" might know what classes to add to get a particluar effect but "Others" don't unless they can select one from a dropdown and add it. Kinda like, you know, variations. Then they don't need to write code, deal with editing css files, and this also prevents "others" from doing things they shouldn't with the display. By "Others" I mean primarily my clients who are supposed to be able to modify content themselves - after all that's why there are more "users" possible in Wordpress etc instead of just the developer.
Ok, fair enough, I am surprised that you have clients doing block variations though on particles.
