You need to ask you host for assistance here. Clearly from the error message joomla/gantry is unable to create (make) a directory as it does not have permission to do so. So, either the permissions or owner/group are incorrect or you have a mod_security rule preventing this (so you host should check the security log).

The permissions are ok and owner too. It is the first time I have so many problems, can it be because gantry5?
I'm goind to delete everything and make a new install to make sure. I'll post here the follow up.

No, a permissions issue is not caused by Gantry 5 - this is a server matter.
Please let us know the outcome after you recreate the site.

I'm trying to get this step by step to understand where the problem is. So,
I've installed a fresh joomla. Set ownership for me for /htdocs. Set to 777 all the files that joomla says that must be writable.
Installed last version of gantry5.
Tried to install the callisto template and got this error and warning:
Error
Creating configuration for outline 'home' failed: mkdir(): Permission denied
Error installing template
Warning
Creating configuration for outline 'default' failed: mkdir(): Permission denied
but I don't know where it is trying the mkdir()
I understand it is trying to create the default outline, I suppose under /templates and /templates is 777 ... why it is unable to make dir?
BUT...
I go to templates in admin and callisto - default and callisto - home where created
If I try to select any of these styles I get:
Error
Error loading form file
Warning: simplexml_load_file(): I/O warning : failed to load external entity "/home/magiajsoares/57U0BFW3/htdocs/templates/rt_callisto/templateDetails.xml" in /home/magiajsoares/57U0BFW3/htdocs/administrator/components/com_templates/models/style.php on line 440

You will get that message if the owner/group is incorrect OR mod_security rules are denying the request to make the directory - have you asked your host about this? did they check the security log?

Please can you let me know what exactly they need to check? Because they say it is not a mod_security problem but the directories are 777 ans the mkdir error still happens when I try to install the template. - Trying to learn something every day

Ok, I checked with our lead developer and we don't support FTP mode for Global configuration with Gantry 5.
So, the issue is trying to use Apache2handler (which would require you to use FTP mode) instead of using cgi/fastCGI (without FTP - letting Joomla read/write the files directly).
So - please change to cgi/fastCGI and don't use FTP mode for Joomla.

Sometimes a simple answer will save hours of frustration and even more in down time. I'm sure you simply overlooked my post, so here's a reminder.
5 minutes to install - 2 minutes to push a button and wait while all the errors you described are SAFELY corrected.
Did I say "Safely correct those problems?"
So, you are possibly now only 7 minutes away heaven.
Next, Several days tracking it down. No progress. Same problems.
