Hello, I know that this component is no longer developed but I want to use it for a very small shop. My problem is that it is impossible to put a quantity. Would there be a solution please?

It's a legacy extension that is no longer supported and is unlikely to work with modern PHP versions (or even joomla version). I wouldn't use it at all.
But this will make the quantity show:
.cart_yourcart table input { width: 60px; padding: 0; }
To create a custom CSS compatible with Gantry 5 please read this http://docs.gantry.org/gantry5/tutorials/adding-a-custom-style-sheet .
Remember to recompile CSS from base outline too.
