Replace theme?

Hey, so I created a site using one of the awesome RT templates, but its time for an update and I want to use a different RT template. How do I go about editing a new theme, testing it, etc on the server and eventually replace the old theme? I need the old/current one to stay live while I complete the new one, but I also need to see what the new one looks like live too.
This was a very difficult topic to Google or search the archive. Maybe a link to it on one of the pages?

Some basics to get stated:
Use Akeeba Backup to make a copy of the live site and install it in a subfolder of your site or an local host.
www.akeebabackup.com/akeeba-backup-for-joomla/index.html
With the copy, you can develop / test the new template.
When your dev site is finished, you can reverse the process, making a copy of the dev site and install it back to the root. - Thanks,
