Adding custom .js and .css to page headers

Hello,
The page header has certain css and js files loaded. We have some custom ja and css files we'd like to add for additional functionalities. We prefer to add them somewhere in the /templates/our_template folder so that a Joomla update will not break it.
Since we are using the RT Zephyr template we'd like to ask how best to add them at this forum.
Can someone please point out:
- What would be the the best location of our custom js and css files?
- How can we load them into the head of the pages? Please point us to the file(s) to change and code to add to make them appear neatly in the head.
I hope the query is clear, if not just ask for more info here!
