Is it possible to switch between two rocket themes within a single installation of joomla and expect them to work? Lets assume they both use Gantry?

Yes, it's possible.
In the Template Manager, for the default, you will see "Cannot assign default template." but if you go to the other templates, you will see you can assign different menus to different templates. - Thanks,
