Just start with a RocketTheme template, and then strip out everything that is artistic, creative, clever, and cool. (Just kidding, but I gotta' root for the home team here!)
Actually, this is one of the better Drupal templates available. At least it's clean and looks relatively professional as Drupal templates go. I'm not aware of a port of iTheme to Joomla, but this should be fairly easy to implement from scratch as a Joomla template... it's not very complex.
the layout and design looks simple enough, but i couldn't implement the javascript part... youyou or daniel chapman would make short work of it though.
note: you'd have to keep a link to ndesign-studio on it, unless you paid for a license.
