What to get... Joomla (ultra-)noob admits being confused :-)

Hi,
I am trying to learn Joomla and was recommended RocketTheme, which I have now paid for... But I am really confused about what template to start working on for my project, so I hope I can get some advice from more knowledgeable community members
What I'd like is:
1) A website with articles and a forum.
2) There would be 5 to 8 main categories of articles that you should be able to access from the main page.
3) The 5-8 subpages are more or less a mix of a blog (newest article being "the page", and headlines of older articles being shown below (if older articles could be made to "open" as dropdowns if you click the headline, that would be sweet, but one page for each article is also ok)).
4) Other pages with links to affiliates that are accessible from a sidebar on all pages.
5) I'd love for a "tidy" layout but somewhat stylish layout (I realize this is more or less down to personal references, but I hope you understand what I mean...
6) A forum for users.
7) Also it would be great, if users can create profiles.
!) But above all (being a noob) simplicity and functionality is preferred over design and razzle dazzle :cheesy:
Any and all help is MUCH appreciated.

If you need a forum you can choose phpBB3 which we have templates for or maybe one of these:

As for which template to choose is very individual but maybe you will like Panacea or Camber:
