Modifying Templates - Layout

Hi. I have recently moved from html-php includes type website to Joomla. One reason is conformity and access to data from anywhere. I have been using on my joomla powered site one template but three versions. The standard 3 column tpl uses only mainpage (frontpage and Ijoomla News), the second version is only 2 columns (left menu and main content only) and the third has no left and right columns at all. The latter because it uses a wrapper to my other website which has it's own left menu. All I do is edit/delete areas not required in templates and rename xml file and zip file with something like Power_TPL1,PowerTPL2, etc so admin sees the templates as different versions. Ok so far?
So now I have fallen in love with Versatility III templates but these template files and CSS appear more complex than my originals. Am I able to do the same delete/edit on Rockettheme tpl's? - With a bit more effort I will get there eventually
