- no ... it really depends what you want to do ... use the less file if you want to use less.
  use the css if you wabt use straight css.

  why is the custom-css file in one file, it is not "formatted" per say...its so hard to find a line to edit..why is that?

- I dont really understand what you mean?
  If you add a custom css file it's blank and you have to add what you want ...
  I strongly suggest to read
  www.rockettheme.com/blog/coding/32-basic...mizing-with-less-css
  and the corresponding tutorial on the gantry-framework.org
