Help With Editing Default Graphics

I just joined the club not too long ago and would like to use many of the templates on my sites.
My problem is I am a dunce when it comes to editing these things. I have choosen about 20 of the templates that I want to use but I dont know how to edit the default text in the headers. I know some of the templates come with a blank one and I can juse use that but...
What do you do with the ones that have the entire site as one source file?
I would like to just pay someone to do this for me. I have 20 templates.
Any takers?
Im going to post the job on elance as well, but I thought I would check in with the pros first.
In fact, if anyone would be interested in walking me thorugh editing those source files in fireworks via skype or something I would gladly pay for 1/2- 1hour of your time.
Any help would be truly appreciated.
