Looking for suggestions on what template(s) to consider for my site.
I'm basically a beginner with Rockettheme, CSS, HTML etc..
I made sites back in the "old days" before all of the cool stuff of today so I am basically familiar with HTML.
I've installed Joomla and have gone through some tutorials on that and can make basic sites, modify a little CSS, add custom HTML and basic things.
My website will be basic. Few pages of products with some type of ecommerce, few pages of articles on products and user submitted "help", About and Contact. Maybe later a blog style page to showcase my new products.

I would favour the more "recent" of our templates since they are al responsive, have the latest features and work with all modern browsers.
As regards the ecommerce aspect - you are going to need an extension to do that - so look on JED, (e.g. mijoshop, redshop, etc) - our templates will work alongside most of those ecommerce solutions.
Blog is just standard joomla functionality and all the templates include an example blog page.
So really it just comes down to the template that you "like the look of".

I was hoping for a little more direction.
I've been working with the Paradigm template and it seems overly complicated for what I want to do.
I've spent half the day and so far I've changed the logo and some text on the front page.
Are any of the templates less complicated?
Maybe I'm looking something more simple than the Rockettheme templates?

Paradigm is not complicated - and most of the other templates work in more or less the same way - it's the styling "look and feel" that varies between them in the main. Of course, the fundamental thing that you are using is Joomla itself - that does take time to learn and can appear somewhat daunting to begin with. I highly recommend that you look at the many Joomla tutorials available on the net, and perhaps even consider Joomla's own books. Our templates are no more complicated that anyone else's - yes, I think we offer more functionaility and features but I don't think that makes them any more complicated that anyone else's templates.
I think you will also find that our documentation is miles ahead of any of our competitors now and again I would envcourage you to study that. The documentation tells you exactly how to reproduce everything we did on the demo. In the case of Paradigm the documentation is here
