Probably Helium for Gantry 5 as it has obsolutely mininimal content and is a very basic (free) theme.
If you want to use the old Gantry 4 then Afterburner2. Just bear in mind that Gantry 4 will not work on the forthcoming Joomla 4.
If speed is your major consideration then consider using GRAV rather than Joomla. GRAV uses flat files to store information rather than a database (as Joomla does) and is therefore considerably faster. You can still use Gantry 5 on GRAV too.
The major influence on speed will be the content that you put on the page.
