IMHO, I will use j3.0 in a production site when following conditions are meet:
- when you dont need a rockettheme template (for now)
- when you can build the website without extensions (other than joomla cms core extensions)
- when you are willing to react and fix any problem or bugs that will sure will come with 3.0, 3.1...
