Running multiple domains

Hi,
We are looking for a solution to host multiple domains on one server.
Currently we have runnig like 5 domains on IIS and want to migrate to a apache server and build the websites in Joomla.
A perfect solution would be to use one database that has diferent tables that begin with a sepperate extension from the sites. For example site1.com has an table called st1_categories and site2.com begins with st2_categories.
Next stage will be to integrated virtuemart on all the domains but with seperated shops.
I know that there is an solution called Milti Sites but does Rocket Theme also have solution?
