Just about to renew membership for Joomla templates.
I need to know if I can 'transplant' certain modules/functionality/styles from different templates in order to achieve a perfect blend for my needs and create an uber-template - pick & mix style.

Sure.
1 site = 1 template, but you want, say, the menu from one template, a few modules from another, template overrides and other bells and whistles from a few more, it would still be one site, one template.

Thanks for reply, just what I needed to hear. Off to renew my membership and will report back with my finished site. It will take me awhile as I never used Joomla before. It might be rocket theme but it ain't rocket science!?!*

- I have a similar question. Can multiple styles from one template be used across one site? If a template has 7 styles, can a different one on 7 different sections of my site?
