Restrict article submit categories for users/authors/etc???

I have my site set up so that registered users are automatically considered authors. And I have the menu item "Submit News" in the user menu visible to all registered users. What I need, though, is for only 1 category to be available to users/authors when they submit an article. This is called "User Reviews." The other categories, "Lead Story" and "Latest News," for instance, should only be available for admin to submit to. I haven't been able to find a way to do this. All the extensions out there seem to require creating different user groups and manually assigning people to them, but I'd like to do this with Joomla's built-in user groups (admin, user, author, publisher, editor). How can I restrict what these users see in the "submit an article" form?? I'm using Hyperion template installed with Rocket Launcher, if that helps, and my site is here:

This is one of the drawbacks of core Joomla that will be changing in Joomla 1.6.
For now, you might want to try FlexiContent which is a new CCK system out that rivals what K2 is doing.
