n00b question - template recomendations appreciated

Hi I apologize in advance if I have posted this in the wrong area.
I am new to rockettheme and web dev and would like some advice as to the most suitable template to use for building a hair products and services website with shopping cart. www.yourhairshop.com is a rough example of the site I am trying to replicate.
Most of the available templates are amazing looking and part of the reason I came here - however, I thought there may be someone with some experience to save a little legroom in this area.
Or is the answer as simple as choosing any I like and inserting my own images and text/ modules from there?
