Menu going up instead of down

Hi All
I've got to build a site for someone and I'm going to use one of the Rocket Theme templates as a start but then need to customise it. I've done this several times but there is one bit that I need some pointers on.
The navigation for the site is going to work a bit like this site:
www.plum-baby.co.uk/
So when you hover over a menu item it will go up instead of down.
Can anyone give me any pointers as to the files that would need to be changed to achieve this, please.
