Generically speaking, you can port any template to Joomla!.
That having been said, however, some are going to be easier than others, especially depending on how faithful of a port you want. Some templates, for instance, will have the print/email icons somewhere other than where Joomla! puts them. Making that work requires a hack to the core.
As for Virtuemart, the new version (1.10 which is in beta now) allows for templates, and I would think long and hard before skinning an earlier version, as forward compatibility might be a problem.
The bottom line: If your graphics skills and your PHP/HTML skills are decent, it is totally doable, especially if the port does not have to be 100% faithful. If it has to be 100%, then grab a bottle of aspirin.

As Matt said in relation to the actuall template. I actually try to find a template stucture that fits the template Im converting, ie module positions. as Graphics is the main change for most templates, then just tweaking css to resize the module positions.
Great to hear virtumart is now skinnable!!! now there is a market! I just installed V .9 but will now go get the beta!
