Trying to control Page Titles

I am trying to find a method of setting different Page Titles rather than using the Page Content Title which is what is happening know.
I would like to have more control and write longer ones if possible. Does anybody know how ?

Hello Christopher
You can disable the page titles on each content item through the items.
You can then write your own titles on the main white text box page. In your content editor, you may seen something called "Format" which is a dropdown menu, this allows you to have "Headings"

The symbol is "-"
Joomla seems to append that to the global description so you get
My Site is ace - Page Description
I have taken the Global Description out so I only get the page description, I now get
- Page Description.
I want to lose the -
