I feel silly asking this but Google is failing me. I'm wanting to move to a new host (rochen to MediaTemple) but I'm unsure about how to move my IMAP mail box and folders to the new mail server. Google is returning very old links on this topic or the the results reference things like running Perl scripts and other utilities that are quite confusing. If I update my DNS settings to point to the new host, is there an easy way to get my mail to the new host's mail server with my boxes intact? If it matters, we all run Mail.app on Mac OS X Snow Leopard. There are only 3 mail accounts in question but I cannot risk losing the mail. Thanks for any insight.

If you are moving from one linux/cpanel host to another, the hosting provider you are moving to should be able to handle that without too much hassle. they basically backup and restore your account to a new system. Many hosting providers offer this as a free incentive. (moving your whole account over) I've used Greengeeks in the past, and currently use HostGator, and both offer such services. Just talk to your new provider, and see what they can suggest.

I always use Google Apps for this very reason. It's much easier to have all email hosted through Google Apps and then be able to move hosts or whatever and still keep all your mail settings.
If you do decide to go with Google Apps and then upload all your mail to them first, then move, be very sure to create an "spf" dns record so Google knows that you're not trying to face an IP and send spam...
Setting DNS ahead of time before a move and including an spf that can resolve at the same time the rest of the MX records do can save a lot of headaches.
