How do I remove all Versatility III content?

Total newbie here - first post - so pardon the low Joomla and RocketTheme IQ:
I am having all sorts of trouble with Versatility III and I just want to go back to Versatility or V II - but my site is still configured with the RocketTheme content and configuration. How do I get rid of all of the content from V III and the configuration of it and go back to the base Joomla configuration/content?

You can choose to install Joomla without any sample data in the installation process. (But you already figured it out).ps - I'd like to hire some Joomla expert by the hour to work on several sites if anyone is interested contact me - thanks.
What sort of work do you need done? Server stuff, php programming or design?
